Beef Enchiladas

3 pounds lean ground beef

1 16 ounce or larger package shredded cheddar cheese

1 tsp. salt

1 tsp. black pepper

½ cup oil (add more if needed)

Sauce:

2 Tbsp. oil

2 Tbsp. flour

3 cups water

1 15 oz. can Wolf chili

24 corn tortillas and ½ cup oil

Over medium heat brown beef and add salt and pepper to taste. Remove pan from heat and set aside. Place cheese in a medium bowl.

Sauce: heat oil. Add flour continually stirring with wire whisk until light brown. Add water. For thinner gravy add some more water. Add wolf brand chili. Stir. Let it come to a boil. Remove and sit aside.

Heat oil in frying pan. Dip corn tortillas in hot oil, one at a time for a few seconds. Place tortillas in a baking pan.

Fill each tortilla with beef and cheese, one at a time. Roll the enchiladas, and place side by side in a baking pan.

Once you fill the pan, pour the sauce over the enchiladas and sprinkle with cheese. Bake @ 350 degrees for 20-25 minutes until cheese is melted.

Note: I had tried many enchiladas, but I did not like the sauce. One day I came up with my own and I loved it. And others do, too.
