Luscious Peach & Mozzarella Duo

Serves 6-8

Ingredients

*4 firm and ripe peaches

*1 orange (fresh squeezed orange juice & orange zest for the arugula)

*4 tablespoons of extra virgin olive oil for your sauté or sauce pan

*4 teaspoons of balsamic vinegar

*3 cups of baby arugula

*10 ounces of fresh mozzarella cheese balls, sliced

*1/2 cup of toasted pine nuts

*2 pinches of cayenne pepper

*2 pinches of ginger

*2 pinches of cinnamon

*handful of fresh mint

*salt

*fresh cracked pepper

**2-3 teaspoons of extra virgin olive oil for your arugula

Dry toast your pine nuts lightly brown in the oven for 3-5 minutes for 350 degrees. After toasted, set aside and cool.

Slice the peaches into segments per peach. Heat up the sauté pan or sauce pan. Add the oil to your pan. Add your sliced peaches to the hot oiled pan. Sauté on each side for 4 minutes. After each side is fully sautéed. Chop the mint. Add the balsamic vinegar, chili powder, cinnamon, ginger, and mint. Stir lightly and flip the peaches over. Cook each side for 1 minute. Sprinkle with salt and pepper. Very lightly toss your arugula with extra virgin olive oil, few pinches of salt, and pepper. Assemble on a platter and top with the warm temperature sautéed peaches, sliced mozzarella, and toasted pine nuts. Zest the orange on top of the salad duo and cut the orange in quarters, squeeze half of the fresh squeezed orange juice on it as well.
